Nutty Banana Muffins

We are on lockdown over here in Italy until this darn Corona Virus runs out of steam! So, that means my time is being filled with plenty of at home patio workouts, recipe developing (you’re welcome), cleaning, reading, and waiting for Tylerina to get home!!

This banana “nutty” muffin recipe came out this afternoon with a desperate need for a muffin but the inability to run to get one! Let me tell you, it was a WINNER.

What You Need:

  • 1/2 cup almond flour

  • 3/4 cup spelt flour (or whole wheat)

  • 1 egg

  • 1/4 cup maple syrup

  • 1 tsp vanilla

  • 2 overripe banana

  • 1/4 cup melted coconut oil

  • 1/2 tsp baking powder

  • 1/3 cup coconut sugar

  • 1 tsp cinnamon

  • 1/4 cup dried fruit of choice

  • 1 scoop collagen * optional *

  • Pumpkin seeds to top * optional *

What To Do:

  • Preheat oven to 375F or 180C

  • Whisk together wet ingredients

  • Combine dry ingredients

  • Fold together

  • Fold in dried fruit

  • Pour about 1/4 cup of batter into muffin tons

  • Top with pumpkin seeds and a banana slice

  • Bake for 22-25 minutes
