Sloppy Joe Nachos - Paleo, GF, DF, Refined sugar free
Sloppy Joe’s are the epitome of comfort food as a child. That and Mac and Cheese!
I was craving a yummy sloppy joe the other night so I was searching around for some more natural/whole food recipes to come up with the final verdict of my own! This, ladies and gents, is the perfect balance of flavor. A major winner in our house!
Prepares 4 servings
What You Need:
4 sweet potatoes
1 Pound Ground Bison (or any grass fed beef)
1 can fire roasted tomatoes (lower sodium)
1 red pepper diced
1 yellow pepper diced
2 tsp minced garlic
1 tsp garlic powder
1 tsp onion powder
1 tbsp oregano
2 tbsp coconut oil
1 tsp chili flakes
1 ½ tbsp paprika
Sea salt & pepper to taste
2 tbsp balsamic vinegar
½ tbsp coconut sugar
1 ½ tbsp dijon mustard
Optional Toppings:
Relish
DF Cheese
More mustard *duh*
All natural Ketchup (this is my favorite brand)
All natural BBQ (this is my favorite brand)
Cilantro
What To Do:
For the chips
Preheat Oven to 425F
Slice sweet potatoes into circle “chips”
Place on an parchment covered baking sheet and drizzle with 1 tbsp melted coconut oil and sea salt
Bake for 35-40 minutes
For the sloppy Joes
Place 1 tbsp coconut oil in a fry pan with the garlic and sautee about 1 minute
Add the ground beef and cook until browned
Add the rest of the ingredients to the pan and stir until well combined and coated with seasonings
Simmer for about 10 minutes
Assemble:
Place Sloppy Joe mix over top of sweet potato wedges. Top with whichever toppings you prefer. My favorite is cilantro, nutritional yeast, and more mustard. Tyler loves a bit of cheese as well!
I love to have the leftovers of this for lunch the next day. The yummiest and freshest of meal preps!
