Healthified Orange Chicken - GF, DF, Paleo

I’m not sure about you guys, but Chinese food is a staple in this household! Before I came gloriously into his live (hehe!!), Tyler was a regular at the good ole Panda Express. I’ve loved showing him that all of his “less than the healthiest” favorites can be made healthier and just as yummy. This one is T man approved, so you know it’s a goody!

What you need:

  • 1.5 lbs chicken breast

  • 2 heads broccoli

  • 1.5 tbsp coconut oil 

For the sauce:

  • ½ tbsp garlic powder

  • 1 tsp ground ginger 

  • ¼ cup chicken bone broth (or simply stock if you can’t find it)

  • 3 tbsp all natural honey

  • 2 tbsp toasted sesame oil 

  • ⅓ cups tamari (I also love coconut aminos)

  • 2 large oranges squeezed - about 1 cup 

  • 1 tsp tapioca starch mixed in water 

Optional toppings:

  • 1 tbsp toasted sesame seeds 

  • Chopped green onion 

  • Chinese mustard 

  • Cashews 

What to do:

  • Melt coconut oil in a fry pan, sautee broccoli in Medium heat for about 10 minutes, continue to cook on low until slightly browned. 

  • Pan fry chicken on medium-high heat until browned on each side (about 10 minutes)

  • Remove the chicken from the pan and dice. 

  • Mix all ingredients for the sauce in a bowl. 

  • Heat sauce over medium heat until boiling. 

  • Reduce heat to simmer for about 15 minutes - until sauce is thickening. 

  • Add the chicken back to the sauce and continue to simmer for about 8-10 minutes. 

  • Serve with broccoli, and either cauliflower rice or brown rice, or a mix of both! Top with preferred toppings and voila!
