Healthy Granola - Refined Sugar Free

Granola is one of those foods that I absolutely adore, but I hardly ever buy at the store. I’ve found it really hard to find a granola that I enjoy, that isn’t loaded with sugar or ingredients I wouldn’t want to have on a daily basis. 

That’s why I love making my own! I love having granola on my evening healthified dessert bowls, or as a little snack in the afternoon. Did I catch you at healthified dessert? I thought I might! Alright, let’s get into the recipe! 

What you need:

  • 2 cups old fashioned oats 

  • ½ cup unsweetened shredded coconut 

  • ½ cup pumpkin seeds 

  • ¼ cup coconut sugar 

  • ½ cup chopped dried fruit of choice (the texture of prunes is great in this recipe)

  • 2 tbsp coconut oil 

  • ¼ cup almond butter 

  • ¼ cup honey 

What to do:

  • Preheat the oven to 325F or 160C

  • Mix the dry ingredients in a large bowl

  • Mix the wet ingredients in a microwave safe bowl and heat for 1 minute until liquid 

  • Add the wet to the dry and combine 

  • Spread the mixture over a large cookie sheet covered with parchment paper 

  • Bake for 15-20 minutes until golden
