Pumpkin Chocolate Chip Cookies

“Alexa, bake me pumpkin cookies and tell me I’m pretty.” 

The man and I were CRAVING cookies this weekend! I’m also getting so into the fall season this year with our food. The amount of squash we’ve had is actually so great, hehe! So of course with our cookie baking this weekend I had to add a little fall twist! So pumpkin chocolate chip cookies it is. 

You guys know me, I love making most things a little healthified, and we did that with these cookies! I used coconut sugar and maple syrup instead of cane sugar! I did use gluten free flour but feel free to use regular or whole wheat as well. These babies are FLUFFY.

Okay! Let’s get to the recipe! 

What you need:

  • ⅓ cup pumpkin puree 

  • ¼ cup butter (can also sub for coconut oil) 

  • ¼ cup coconut sugar 

  • 1 tbsp applesauce 

  • 2 tbsp maple syrup 

  • 1 tsp vanilla 

  • 1 egg 

  • 1 - 1/14 cup flour (depending on your consistency) 

  • ½ cup chocolate chips (I love enjoy life dairy free) 

  • ¼ tsp baking soda 

  • 1 tsp baking powder 

  • 1 tsp pumpkin pie spice 

  • ½ tsp cinnamon 

What to do:

  • Combine all wet ingredients and whisk until smooth 

  • Add in dry ingredients until combined 

  • Spoon onto a cookie sheet and top with sprinkle of course! 

  • Bake for about 10-12 minutes
