Cashew Butter Cookie Bites

Ladies and gents, labor day is coming up! I always love to bring something on the “healthier” side to the picnics and parties for holidays like this so that I can indulge and also have a bit of balance. Often times this is a yummy salad, a delicious roasted side dish, or a healthified dessert. I’ll let you in on a little secret, often times I do this and my family doesn’t even know it’s healthified, and they love it just the same!

Friends, today I have for you the BEST bite size “cookie” recipe. Because sometimes you just need a cookie!

What you need:

What to do:

  • Combine all ingredients (if it’s too dry, add peanut butter by the spoonful until you can mold them into bite size pieces).

  • Roll each bite into flaked coconut to coat the outside

  • Put in the freezer for 20 minutes

  • Enjoy the heck out of it

Store in the freezer or refrigerator!
