Cashew Butter Cookie Bites
Ladies and gents, labor day is coming up! I always love to bring something on the “healthier” side to the picnics and parties for holidays like this so that I can indulge and also have a bit of balance. Often times this is a yummy salad, a delicious roasted side dish, or a healthified dessert. I’ll let you in on a little secret, often times I do this and my family doesn’t even know it’s healthified, and they love it just the same!
Friends, today I have for you the BEST bite size “cookie” recipe. Because sometimes you just need a cookie!
I’ve linked my favorite products for each of the ingredients if you’re looking for a good high quality one.
What you need:
1 scoop french vanilla complete mix
½ cup all natural peanut butter (natural versions works best because of their oiliness)
3 tbsp pure maple syrup
3 tbsp melted coconut oil
⅓ cup flaked unsweetened coconut
2 tbsp dark chocolate chips
What to do:
Combine all ingredients (if it’s too dry, add peanut butter by the spoonful until you can mold them into bite size pieces).
Roll each bite into flaked coconut to coat the outside
Put in the freezer for 20 minutes
Enjoy the heck out of it
Store in the freezer or refrigerator!
