The Best Banana Bread

I don’t know about you, but some foods just bring back the comforts of childhood and home. For me, one of those things is banana bread. My mouth is watering just thinking about it!

I’ve made quite a few recipes looking for a “healthified” version to replace my Mama’s incredible family secret recipe. Friends, sometimes you just have to make the real deal. But I often like to look for “healthified” recipes when I want to have it every day (ideally what I’m looking for is a reduced impact on blood sugar, so using lower glycemic ingredients and more high quality forms). Many of these recipes I’ve tried are so delicious, but not quite what I’ve been looking for. Well, ladies and gents, I have finally found it and hear you go! Go ahead and thank me later.

What you need:

  • 2 cups spelt or oat flour

  • 1 tsp baking soda

  • 3/4 tsp baking powder

  • 3/4 tsp salt

  • 1 1/2 cup mashed very ripe banana (about 4)

  • 1 egg

  • 1/4 cup pure maple syrup

  • 1/3 cup coconut sugar

  • 1/3 cup cashew milk (or milk of choice)

  • 2 tsp pure vanilla extract

  • 1/2 cup walnuts or pecans *optional*

  • Adding ½ cup blueberries is also a marvelous decision *optional*

What to do:

  • Preheat oven to 350

  • Grease a bread pan

  • Combine dry ingredients

  • Mix wet ingredients

  • Combine and mix well

  • Bake for 50 minutes
