The 10 Minute Dinner

Everybody loves a good comforting dinner after a long day. Sometimes comfort food meals aren’t always packed with a punch of nutrients and waistline loving ingredients. More often than not they’re richer than Warren Buffet and Mark Zuckerberg combined. Let me give you your fix for that comfort food dinner without all of the rich and heavy ingredients. Aka all the flavor, none of the food coma. The best part? It only takes 10 minutes from start to finish! Say it ain’t so! Sorry sister…it is so very so.

Alright enough chit chat lets get to the recipe.

What you need:

  • 1 bag broccoli (steam in bag)

  • 1 yellow pepper

  • ½ White Onion

  • 1 Cup Sliced Mushrooms

  • ¼ Cup Sundried Tomatoes

  • 2 Chicken Sausages

  • 1 Cup Whole Grain/Gluten Free Pasta

  • 6 oz. bottle of Chardonnay

Wha you do:

  • Cook the pasta and chicken sausage over stove as instructed

  • Steam the broccoli in the microwave until cooked.

  • Add chopped pepper, onion, mushrooms and sundried tomatoes to a medium sauce pan. (Add a dash of EVOO or spray with cooking spray so they don’t stick)

  • When vegetables begin to brown add the bottle of wine, let simmer for 3-5 minutes.

  • Add veggies to pasta and chicken sausage and voila! Gourmet meal in 10 minutes or less.

  • Optional: top with sprinkle of nutritional yeast or cheese

Recipe serves 2.

As for the chicken sausages, look for a brand where the only ingredients are chicken and whatever flavor it is. Was that confusing? I think that was confusing. Let me explain. If you buy “apple gouda chicken sausage” the ingredients should be chicken, apples, gouda, sea salt and pepper. No sugar, chemical looking ingredients are extra preservatives. Make sense? Great, if not shoot me a comment I’ll clear it up for you!

As for the pasta, I prefer gluten free pasta in the form of brown rice or beans/lentils. I find the ingredients to be much higher quality and easier on the stomach because they may not go through as much processing as the whole grain versions. Just look for minimally processed, minimal ingredients.
