Christmas Cranberry Peanut Butter Blossoms

Friends. Do you know what the absolute best Christmas cookie combination is? I don’t think you do. Nope, I don’t think you do. But don’t worry, I’m on the nice list this year. I’ll let you in on the little secret.

PEANUT BUTTER ANYTHING.

If you didn’t see that coming from me, the peanut butter obsessed woman, I’m gonna suggest you go get your eyes checked.

Peanut butter blossoms will forever be my favorite christmas cookie. BUT. Lord knows I love a good “healthified” option especially during the holidays. People usually use the word “healthier” but I feel like “healthified” is just so much more fun. I also love fast and easy options, and this recipe is exactly that!

So I give you, the healthified Christmas Cranberry Peanut Butter Blossoms. I should’ve come up with a shorter, more clever name, but unfortunately I’m not very clever.

What you need:

  • 1 Tbsp Pure Maple Syrup

  • 3 Tbsp Coconut Oil (melted)

  • 1/3 Cup Natural Peanut Butter

  • ½ Cup Vanilla Complete Protein

  • ½ Cup Dried Cranberries

  • 1 Tbsp Chai Seeds

  • 2 Tbsp crumbles pecans

  • 1-2 Tbsp dark chocolate chips

Mix all ingredients in a bowl until thoroughly combined. Using a spoon, form into balls and place in the freezer until hardened. Feel free to keep in the refrigerator after their shape has kept.

See? Easy! You don’t even need the oven or mixer!

For the cranberries, try to find a brand where the ingredients are only cranberries, no added sugars. This will keep them more on the healthy side. For the dark chocolate chips, I love the brand "Enjoy Life." They have a dairy free, gluten free option. As for the protein, I use a high quality plant based protein with 8g fiber and 13g protein. It’s the only protein out there with a perfect score by the PDCAA so I feel great using this one! Otherwise I prefer different sources of protein.
