Chocolate Peppermint Bites

Healthier Christmas cookies even the kiddos will enjoy. Add this recipe to your family favorites for a healthier option this year. Made with all natural ingredients and ZERO refined sugar! I just used one tablespoon of maple syrup to sweeten these bites.  

As for the protein, I used a plant based protein made with 15 different plants just to sneak in those healthy micronutrients without the family even noticing! I mean who questions chocolate? Feel free to use any protein you enjoy, but keep in mind the sweetness is largely affected by the protein used.

 

What’s in it:

  • 1 Tbsp pure maple syrup

  • 3 Tbsp coconut oil (melted)

  • 1/3 Cup natural peanut butter

  • ½ Cup chocolate protein (I used plant based…sneak those micros in!)

  • ½ Cup flaked unsweetened coconut

  • ¼ Tsp peppermint extract

  • 2 Tbsp unsweetened cocoa powder

 

What to do:

Guess what the best part of this is? You only use….drumroll please…ONE BOWL. Yep. One. Which in my mind means less dishes to clean up, yay!

Simply mix all ingredients listed above in the bowl. The texture should be wet and sticky. Form the mixture into bite sized balls.

Finish by rolling each bite in the extra flaked coconut and place them in the freezer. I prefer these straight from the freezer, you may also keep them in the refrigerator for a softer texture.

 

Recipe makes 8-10 bites.
