Apple Turkey Stuffed Acorn Squash
Is there anything better on this beautiful earth than fall food? Oh yes of course, nut butter, thank you for that reminder. Other than nut butter? NO. NOTHIN’. NADA.
It’s still a brisk 95 degrees here in the desert but that doesn’t stop me from pulling out all of the amazing fall foods, recipes, and clothes (until of course I start sweating out my eyeballs and the bathing suit comes back at that point) but I digress.
Today I’m sharing with you one of my favorite fall dinner recipes!
Apple and Turkey Stuffed Acorn Squash
About 1 hour
What you need:
2 Acorn Squash
1 tbsp avocado oil
1 lb. ground turkey (I like 93% for this recipe)
1 medium honeycrisp apple
1 small yellow onion
1 clove minced garlic
¼ cup low sodium chicken broth
½ cup mushrooms
2 tsp sage
½ cup parmesan cheese
Dash pink sea salt
Dash black pepper
What to do:
Pre-heat oven to 425 degrees
Slice acorn squashes in half and spoon out seeds
Sprinkle with salt and pepper
Place meat side down in a baking dish, bake for 30 minutes
Meanwhile, brown the ground turkey in a medium skillet
In a separate skillet, add avocado oil, onion, and garlic. Saute 1-2 minutes
Add diced apple to onion mixture, saute until soft
Add turkey to apple mixture, add chicken broth and mushrooms and steam covered until mushrooms are cooked through
Spoon meat mixture into the acorn squashes
Top with parmesan and bake an additional 10-15 minutes
I love to serve this with roasted greens, either broccoli or brussel sprouts pair perfectly!
